Smooth Snacking
When your child gets home from school, the best thing you can offer them is a big hug.
But sometimes, a little after school snack can make the welcome home even sweeter. And we’ve got a tasty recipe for you – fruit smoothies.
The best thing about this family friendly, fun snack is that you can improvise with it. Use whatever fruit you have available in the house. Bananas, pineapple, strawberries, watermelon – each fruit will produce different, delicious results. And when you mix them up, now that just makes it even better!
We’re a little partial to the color yellow over here, so we’re using mangos and bananas, and a recipe adapted from TheKitchn.com. Enjoy!
Mango Yogurt Smoothie
makes 3 servings
2 large ripe mango, pitted, peeled and cut into a few chunks
2 ripe bananas, peeled and cut in half
2 cups low-fat yogurt
2 cups crushed ice
Pinch of salt
Basil for garnish
Blend all ingredients except for the basil in a blender until very smooth and frothy. Taste and add a little sugar if you want to sweeten it up. Garnish with basil, serve, and enjoy as an after school snack.
