Chef Vernetta’s Pineapple Salsa from RMHC Jacksonville

Chef Vernetta

Ingredients:

  • 2 cups fresh pineapple diced
  • 1/2 red onion, diced
  • 1/4 cup finely diced red pepper
  • 1/4 cup minced fresh cilantro
  • 1 whole lime, juiced
  • 1tsp mild olive oil
  • Salt & pepper to taste

Directions:

In a small bowl, combine pineapple, red onion, red pepper, cilantro, olive oil and lime juice, Refrigerate until serving.
