DILL PICKLE PASTA SALAD
Ingredients
-
1 lb. dried pasta of choice – shells, macaroni, smaller shapes work well
-
1 cup baby dill pickles or cornichons – sliced
-
1 cup cheddar cheese – shredded
-
½ sweet white onion – finely diced
-
3 tablespoons fresh dill
-
1 cup pickle juice – reserving ½ cup for dressing
-
1 cup mayonnaise
-
½ cup sour cream
-
Salt and pepper to taste
Directions
-
Boil pasta until al dente according to package directions. Run under cold water to stop cooking.
-
Toss pasta with 1 cup of pickle juice and set aside for 10 minutes to marinate. Discard all but ½ cup pickle juice and set aside for dressing.
-
For the dressing, combine mayonnaise, sour cream, reserved pickle juice, dill, salt and pepper, and mix well.
-
Toss the pasta, pickles, cheddar cheese, onion and dressing so all is evenly coated. Refrigerate at least 1 hour before serving.
This dish makes a perfect side for your next BBQ, or you can add roasted chicken, canned tuna or chickpeas for a heartier, more protein packed plate. Enjoy!
