DILL PICKLE PASTA SALAD

 

Ingredients

  • 1 lb. dried pasta of choice – shells, macaroni, smaller shapes work well

  • 1 cup baby dill pickles or cornichons – sliced

  • 1 cup cheddar cheese – shredded

  • ½ sweet white onion – finely diced

  • 3 tablespoons fresh dill

  • 1 cup pickle juice – reserving ½ cup for dressing

  • 1 cup mayonnaise

  • ½ cup sour cream

  • Salt and pepper to taste

Directions

  1. Boil pasta until al dente according to package directions.  Run under cold water to stop cooking.

  2. Toss pasta with 1 cup of pickle juice and set aside for 10 minutes to marinate.  Discard all but ½ cup pickle juice and set aside for dressing.

  3. For the dressing, combine mayonnaise, sour cream, reserved pickle juice, dill, salt and pepper, and mix well.

  4. Toss the pasta, pickles, cheddar cheese, onion and dressing so all is evenly coated.  Refrigerate at least 1 hour before serving.  

This dish makes a perfect side for your next BBQ, or you can add roasted chicken, canned tuna or chickpeas for a heartier, more protein packed plate. Enjoy!
