Blueberry Muffins ​ from RMHC Maine

When you walk into the kitchen of the Ronald McDonald House and a group of volunteers are preparing a home-cooked meal for the families, you can just smell the love in the air.

Ingredients (makes one dozen):

Batter

  • ½ cup butter

  • ¾ sugar

  • 2 cups flour

  • 2 teaspoons baking powder

  • ½ cup milk

  • 1 egg

  • 2 cups blueberries, fresh or frozen

 

Topping

  • ½ cup sugar

  • ½ cup flour

  • ½ teaspoon cinnamon

  • ¼ cup butter, soft

 

Directions:

  1. Cream butter.

  2. Add sugar and beat.

  3. Add egg and beat well.

  4. Add dry ingredients alternately with milk.

  5. Fold in berries.

  6. Fill greased muffin tins 2/3 full.

  7. Combine topping ingredients in blender.

  8. Sprinkle on muffins.

  9. Bake 20 to 25 minutes at 375 degrees.
