Murcian Paparajotes from RMHC Spain

Murcian paparajotes 

Ingredients 

-2 eggs.

-300 g of sugar.

-8 g of baking powder.

-½ liter of milk.

-500 g of flour.

-10 g of cinnamon.

-Zest of 1 lemon.

-Lemon leaves.

-Sunflower oil for frying.

Preparation mode 

-Step 1: mix the yeast, eggs and 100 g of sugar in a container. 

-Step 2: after mixing the ingredients in step 1, add the milk and stir. 

-Step 3: add the flour and the zest of a lemon to the mixture. 

-Step 4: once the dough is prepared, soak the lemon leaves with it. 

-Step 5: fry the lemon leaves covered with the dough in sunflower oil over medium heat. 

-Step 6: Let the oil drain after frying on a plate with a napkin.

Decoration and plating 

To decorate and plate the paparajotes, we mix the remaining ingredients, 200 g of sugar and 10 g of cinnamon.  Once these ingredients are mixed, a coating of the sugar and cinnamon mixture is added to the lemon leaf with the fried dough.  (DON’T FORGET TO REMOVE THE LEMON LEAF BEFORE EATING!)
