Roasted Pork Loin
Ingredients:

1 pork loin
-
2 T. vegetable oil, more if needed
-
1 T. McCormick Perfect Punch Stalk Free Garlic and Herb seasoning

1 T. Trader Joe’s 21 Seasoning Salute
Directions:
-
Place vegetable oil and pork loin in a bowl.

Turn meat until entire roast is coated with oil.

Sprinkle all sides of meat with both seasonings and briefly rub into the meat.

Cover with plastic wrap and slip into a resealable bag to marinate overnight.

Place oven rack in center of oven and preheat oven to 450 degrees.

Lightly spray a 9x13-inch baking dish with nonstick spray.

Remove meat from plastic and place fat side up into the dish.

Bake in preheated oven for 15 minutes. Reduce heat to 325 degrees and bake for an additional 45 minutes to 1 hour or until internal temperature reaches 145 degrees.

Take care not to overbake.

Remove from oven, wrap in foil, and let rest for 30 minutes.

Slice and serve.
Slow Cooker Mashed Potatoes
Ingredients:

5 lbs. potatoes, peeled and sliced
-
1 8oz. Package cream cheese, softened
-
1 8oz. container sour cream
-
½ cup butter, melted
-
Salt and pepper to taste
-
1 bunch fresh chives
Directions:
-
Place potatoes into a large pot and cover with water.
-
Salt water to taste and bring to a boil.
-
Cook until fork tender.
-
Drain and mash potatoes with a hand masher until lump –free.

Combine cream cheese, sour cream, pepper, and butter in a bowl and mix until smooth.

Add mixture to potatoes and blend well.

Stir in chopped chives reserving a small amount for garnish.

Place potatoes into a well-greased Crock-Pot and heat on low, stirring occasionally, for 304 hours or until internal temperature is 140 degrees or higher.

Garnish with remaining chives.
Slow Cooker Green Beans
Ingredients:
-
1 (#10) can green beans
-
½ lb. bacon, chopped
-
1 onion, diced
-
1 T. beef paste, heaping
Directions:
-
Place green beans into a Crock-Pot and turn on high.
-
Cook bacon until done.
-
Sauté onions with the bacon until onion is translucent.
-
Add bacon and onion mixture to the green beans.
-
Stir in the beef paste and mix well.
-
Cook on high, stirring occasionally, for 3 hours.
